Straight Malt Whisky
Our flagship product: 100% Colorado from grain to glass | Consisting entirely of barley that is both grown & malted in Alamosa, Colorado, we add a Scottish twist by including a small amount of peated malt. The whisky ages for a minimum of two years in new, full-size, charred American Oak barrels. After that, it’s up to the discretion of our distillers and the sensory panel to determine when bottling will occur. As with all of our spirits, we use fresh Rocky Mountain water to cut the proof, and the whisky is bottled as a single barrel - we don’t do any blending. This approach allows us (and you!) to experience the many nuances that make each barrel unique. Bottled at 90 proof (45%).
Cask-strength Malt Whisky
Unproofed whisky, straight from the barrel into the bottle | Our Straight-Malt Whisky shows well at high proof, and thankfully Colorado’s unique climate - high altitude, with very little humidity - means that the longer the whisky sits in the barrel, the higher the proof climbs. Depending on the barrel, the cask strength whisky can be anywhere from 125 to 127 proof (62.5%-63.5%). As with the 90 proof version, our cask strength is bottled as a single barrel and each is unique; however, all share similar rich, nutty, and dark sugar characters. Only available in 375mL in the tasting room, though occasionally a liquor store exclusive is released in 750mL.
Batch 13 Gin
Our classic gin, double distilled | A Tasting Room exclusive, and a product that came about unexpectedly! We run our Classic Gin through the still a second time with another batch of botanicals. This creates an exceptionally smooth tasting product with heavy botanical characteristics. Bottled at 84 proof. How did it happen unexpectedly, you ask? We had a spirts drum filled with gin ready for packaging when we noticed a hole in it that began to rust. Instead of dumping the product, we redistilled it to remove any impurities. The end result was a nice surprise, and for a short time thereafter, each 13th batch of gin was double distilled and became Batch 13.
A respectful nod to a gone-but-not-forgotten favorite from the past, old tom gin | We age our Classic Gin in new, charred American Oak barrels for six months. With warming flavors of Mexican vanilla, cassia cinnamon and nutmeg, Barrel-Finished Gin showcases our intentional interplay of liquid and wood. Bottled at 84 proof.
Our Vodka is a grain neutral spirit distilled from corn and blended with fresh Rocky Mountain water. A smooth spirit with a light finish. Bottled at 80 proof.
Mountain Bum Rum
Made with black pearl molasses, cane sugar and Caribbean-cultivated yeast, then aged in used whisky barrels | Although making whisky was at the core of our mission when we created Spirit Hound, we quickly realized that our custom-built still could also produce an outstanding rum. This double-distilled spirit has a silky mouthfeel with a mellow oak and molasses character, along with esters of cinnamon, cotton candy, vanilla and tropical banana. Bottled at 90 proof.
We call it ‘Colorado sambuca’ as a nod to the origin of our state - meaning ‘colored red’ | Making for a fine digestif, Colorado Sambuca is infused with an enormous amount of wild-grown elderberries. The addition of whole, organic star anise imbues our version of this classic liqueur: the wonderful licorice character one would expect from a world-class sambuca. Bottled at 90 proof.
Our exceptionally smooth un-aged whisky | Instead of the moonshine going from the still into oak barrels for aging, we use fresh Rocky Mountain water to proof it down then bottle it. The peated malt creates a hint of smokiness that resembles the character of a mezcal. A Tasting Room exclusive! 90 proof.
During our time, we’ve produced two Bottled-In-Bond whiskies, a brandy, and our exclusive Revelry Gin created by our ladies group, The Whisky Wenches. In 2020, we released our first barrel of experimental bourbon, along with our very FIRST BARREL of straight-malt whisky, which is nearly eight years old! Our small batch gin starts with freshly-picked juniper berries that come from the banks of the st. Vrain river here in Lyons, Colorado | We use the ‘basket’ method to create our Classic Gin by suspending a mesh wire basket filled with our signature mix of botanicals in the column of our still. As the hot vapor rises, it extracts the wonderful essences of juniper, anise, coriander, clove, cardamom, cinnamon, fennel, and freshly zested lemon and lime. Bottled at 84 proof.
Colorado Honey Whisky
Limited availability | A local collaboration with bee squared apiaries | Based in Berthoud, Colorado, Bee Squared uses our spent whisky barrels to age their raw honey for 90 days, rotating the barrel once a day. After the Whisky Honey is packaged, the barrel is given back to us and we finish our aged whisky for another 90 days. The end result is well-balanced and smooth with a delightful honey finish (not saccharin-sweet). Bottled at 90 proof.
